Grilled Baby Back Ribs |
Ingredients: * 3 racks pork baby back ribs * Rub: * 1/4 cup sugar * 2 tablespoons salt * 1/4 cup brown sugar * 2 tablespoons chili powder * 1 1/2 tablespoons ground cumin * 2 teaspoons cayenne pepper * 2 teaspoons ground black pepper * 2 teaspoons garlic powder Sauce: * 1 1/2 cups ketchup * 1/4 cup honey barbecue sauce * 1/4 cup brown sugar * 1 tablespoon lemon juice * 1 tablespoon steak sauce Directions: Set up grill for indirect cooking over medium heat. Remove thin membrane from back of ribs and set aside. In a small bowl, combine sugar, salt, brown sugar, chili powder, cumin, cayenne pepper, black pepper and garlic powder. Rub mixture on both sides of meat. Allow meat to come to room temperature. Place ribs, bone side down, on grill rack over a drip pan. Close grill cover and cook 2-2 1/2 hours, rotating ribs every 30 minutes. Meanwhile, prepare sauce in a small saucepan, by combining ketchup, barbecue sauce, brown sugar, lemon juice and steak sauce. Cook over a low heat for 10 minutes, then remove from heat. The last 20 minutes of grilling ribs, place meat side down on grill rack. Brush with sauce and cook 10 minutes. Turn ribs, brush with sauce, and cook 10 minutes longer or until desired tenderness. Remove from grill and cut rib racks in half, or thirds, to serve. Makes 4 Servings |
